Today we went to Lexi's house!!
This time we cooked our own food to serve them.
(The down side two are my works XD)
Lexi and Andy were quite polite, they all said like our food!!
After a cup of tea and chat, we moved into another event- making cakes.
At first, Lexi just prepared to make some cupcakes, however,
aftering reading the beautiful cake book, Lin-Lin suggested that we
can make strawberry cheesecake cupcakes as well.
Therefore, Andy popped out to buy strawberry and drinks, and we did
normal cupcakes first.
It was quite easy, just follow following steps!
Ingridents:
50g sofr margarine
50g caster sugar
50g S.R. Flour
1 egg
25g polka dots, cherries or currants
10 paper cake cases
1. Oven 200c/6.
2. Place 10 paper cake cases in a patty tin.
3. Place all ingredients in a mixing bowl. Beat well.
4. Place a spoonful of mixture into each paper cake case.
5. Bake for 10-15 mins. until springy to the touch.
Final decoration!!
Before decorating them, we need to wait until them cool.
Therefore, while waiting, we did the strawberry one simultaneously.
We need biger cases, which are used for muffin.
Here are the ingridents:

120g plain flour
140g caster sugar
1.5 teaspoons baking powder
a pinch of salt
40g unsalted butter, at room temperature
120ml whole milk
0.5 teaspoon vanilla extract
1 egg
12 large strawberries, chopped into small pieces
200g digestive biscuits
1 quanitity Cream Cheese Frosting
12 paper cake cases
1. Put flour, sugar, baking powder, salt and butter into mixing bowl.
Beat on slow speed until everything is combined.
2. Pour in milk and vanilla extract and beat on medium speed until
all the ingridents are well mixed.
Then add egg and beat well for a few min.
3. Divided the chopped strawberries between the paper cases.
Spoon the cupcake mixture on top intill two-thirds full and
bake in the preheated oven for 20-25 mins.
4. Then cool them for mins and make Cream Cheese Frosting.
Cream Cheese Frosting
300g icing sugar, sifted
50g insalted butter, at room temperature
125g cream cheese, cold
(1) Beat the icing sugar and butter together
until the mixture comes together and is well mixed.
(2) Add the cream cheese in one go and beat
until it is completely incorporated.
(3) Continue beating until the frosting is light and fluffy, at least 5 mins.
5. Roughly break up the digestive biscuits and
put them in a food processor.
6. Until the cakes are cool, spoon the Cream Cheese Frosting
on top and finish with a sprinkling of finely ground biscuits.
Eat cakes with milk tea!! What a nice English afternoon tea.!!
The decorations are really sweet....
So, we left a lot= = and everyone took three cakes back home...
Anyway it's still a good experience.
Next time I want to try tart!!
